This week my husband to be is on holidays and he’s bunkered down at my place for the next two weeks. Good for me and my cooking experiments, he loves to eat and I love too feed! He needs a lot of high calorie food all the time to keep weight on whilst he under goes his weights training regime.
I often find the hardest thing for him is the volume he has to eat, therefore these bite size strawberry and white chocolate scones are perfect for in between meals to keep the calories flowing. More importantly this is a healthier scone version you can cook to impress visitors!

This strawberry scone recipe makes 12
3 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/3 cup sugar
1 teaspoon pure vanilla extract
300ml thickened cream
3/4 cup coarsely chopped fresh strawberries
1/3 cup chopped white chocolate
Place a rack in the upper third of the oven and preheat oven to 200 degrees. Line a baking sheet with baking paper. In a medium bowl, whisk together flour, backing powder, salt, and sugar. Pour and mix in vanilla extract and cream, knead the mixture by hand till it comes together. The add the strawberry chunks and white chocolate chunks.
Dump the dough onto a lightly floured work surface. Gently gather and knead the dough into a dish and press into balls. Place balls apart on the prepared baking sheet and bake for 12 to 14 minutes or until golden brown and cooked through. Remove from the oven. I prefer to eat them warm with a mug of hot tea.
