I’ve been thinking about way to get more vegetables in without making to much of an effort. I know how hard it is to cook and prepare vegetables all the time, especially when you need a snack on the go.
At the moment I have a heavy training load and I’m getting so hungry. I need ways to bulk out my eating without gaining weight. I’ve got a half marathon coming up where I’m trying to drop a few kilos to get my run times faster.
This is what I came up with combine low sugar fruits like blueberries, strawberries and celery in a smoothie. You can’t actually taste the celery, so give it a try 🙂 Do you have a vegetable smoothie you enjoy and want to share?
- 1/2 cup celery
- 1/2 cup frozen strawberries
- 1/2 cup frozen blueberries
- 1 cup skim milk
- 1 heaped tbsp Greek style vanilla yogurt
- 1/2 tsp cinnamon
- 1 tsp stevia
Blend and serve the smoothie cold.
