I’ve got one word for you – Mediterranean. You’ve probably seen this salad a dozen times at restaurants, but now you can also have it at home.
I love this salad because it’s quick and easy to make, the ingredients are relatively cheap and it feels indulgent. There are so many variations of this too, you can add olives, artichokes, sundried tomato’s, anything goes.

Ingredient- Serve 1
¾ cup Baby bocconcini cheese
2 thinly sliced tomatoes
Handful fresh basil
2 tsp olive oil
Slice tomatoes place neatly on a plate, scatter with bocconcini cheese and basil. Drizzle with olive oil and salt. Serve cold.
