Breakfast is the most enjoyable meal times for me because I generally get to choose something sweet to eat, I have a raging sweet tooth most of the time haha. 

 

It just so happens that this months #TheRecipeRedux theme was unusual breakfast. It’s because of this I decided to come up with, what I would call a fandangled breakfast. It’s fandangled because its a little more complicated than pouring cereal into a bowl and adding milk.

The goal was to combine the fullness of eggs, with the sweetness of fruit into something that resembled a healthy dessert, with minimal added sugar of course. This is how the #BreakfastPudding was born!

I was just lucky to have some Orange Lindt dark chocolate on hand to make this Breakfast extra decadent. Thanks to one of my clients who works at Lindt chocolate, this gift did not go to waste!

The great thing about this recipe is that you can bake it the night before and reheat the next day. It will also freeze well if you’re planning a Breakfast get together. You can also adjust it to your tastes. For example you can leave out the chocolate and swap it for dried fruit or banana. You can choose different nut varieties, you can also add protein powder if you need more protein in the morning. Can’t go wrong with a mix and bake.

Ingredients- Serves 4 

 

16g Orange Lindt chocolate chopped finely 

4 Slices of raisin toast 

1 grated green apple 

2 tsp stevia

1 tsp ground cinnamon 

5 eggs

200ml milk

60g mixed nuts roughly chopped (walnuts & pistachio)

 

Method 

 

To start you need 4 oven proof ramekins. Turn the oven on to 180 degrees.  Chop the crust off the raisin toast. Place the bread (hold on to the crusts for later) into the bottom of the ramekins. 

 

In a separate bowl add eggs, milk and whisk.  Add remaining ingredients and fold the mixture together. Chop the raisin toast crusts into small crouton size squares. fold this into the mixture as well. 

 

Pour the wet mix equally into the 4 ramekins, place in the oven for 25minutes until it puffs up and turns golden brown on top. Serve warm with a green smoothie.

Ingredients

 

1 banana

1 cup baby spinach

250ml coconut water

1 tsp stevia 

 

Method

 

Wash the spinach and peel the banana. Blend all the ingredients together. Serves 1
