I find a big problem in house holds is kids and adults alike standing in front of the fridge or cupboard grumbling that there is nothing to eat. The truth to the matter is, there is plenty to eat, you just have to use your imagination. This recipe is useful if you’re running out of food or the kids are bored, as long as you have the staples, you have no excuse that there is nothing to eat.
This 3 ingredient pancakes recipe is the perfect post training snack. I used this after a huge swim set last week, nothing worse than coming home from training hungry. Best of all, its only 3 ingredients, yes just 3! This means it’s simple, easy, even the kids can do it.
- 2 tbsp smooth peanut butter
- 2 eggs
- 1 med banana
Whizz together all the ingredients in a blender. You can either spoon out small portions of the batter into the fry pan or pour. To fry use a non stick fry pan, it’s optional if you want to use spray oil. Fry the pancakes until they’re golden brown. You can choose to have them just like that or top with what ever takes your fancy. I used mixed frozen berries and vanilla yogurt. You can eat the 3 ingredient pancakes hot or cold, it’s up to you. Enjoy!
